Although the title focuses on gluten-free diets, this readable book is also a primer on celiac disease, an autoimmune condition in which the body's attack on itself is triggered by the protein present in grains, including wheat and rye. The resulting stomach symptoms are often hard to diagnose, but once sufferers understand the cause, they quickly learn their only real course of treatment is adopting a gluten-free diet. The authors admit that gluten-free living isn't easy, but they insist their diet can be simple and delicious. But before getting to recipes, there are some rather stern chapters: Shopping for Gluten-free Groceries and Gluten-Proofing the Kitchen (including buying a new toaster and keeping separate cutting boards). There's also lots of information about maintaining good nutrition and how to substitute for common grains. (Chestnut flour, anyone?) The recipes themselves are formatted in an easy-to-follow style, and most do sound tasty everything from spinach quiche with prosciutto to pasta with shrimp and peas.
