This 2018 edition of a culinary classic continues the tradition set by the long-running public television show and magazine series, promising to provide practical, commonsense information to make any reader a better cook. Some 150 of the "best" recipes tried and tested by the show's cooks, including steps, photographs, and detailed instructions, along with tips and tricks from the kitchen (equipment suggestions, shortcuts, and more) are divided into eight categories: "Appetizers"; "Soups, Stews, and Curries"; "Vegetables and Sides"; "Pasta, Pizza, Sandwiches, and More"; "Meat"; "Poultry and Seafood"; "Breakfast, Brunch and Breads"; and "Desserts." Separate chapters on Test Kitchen resources and conversions and equivalents provide an exhaustive array of information on the best ingredients and tools, as well conversions for volume, weight, and temperature. Each recipe also comes with a detailed narrative explaining just about every element that goes into its creation, while the index makes it easy to search by meal and main ingredient for the perfect dish. -VERDICT A must for any home cook.-Gricel Dominguez, Florida International Univ.
