In this strong debut, London food writer Metaxa-Albu melts cheese into a panoply of dishes, beginning with the soft and mild, then proceeding to the hard and pungent. Variations on classics include a pancetta-wrapped grilled cheese sandwich, with salty pork complementing a tame mozzarella, and blue mac and cheese made with Gorgonzola, walnuts, and a hint of nutmeg. Indulgent options like bacon and Stilton mashed potatoes are offset by a surprising number of healthy salad choices including chicken peach quinoa bowls with crumbled feta, and a goat cheese berry salad. Would-be cheesemakers will find instructions for churning out four different soft varieties ("Making cheese from scratch doesn't have to be complicated"), and party hosts can choose from two cheese boards, one classic and one "deconstructed" that's dished up like a salad. On the sweets front are chocolate chip ricotta pancakes and chili and Grana Padano cookies that serve as a dessert wine companion.
