Renowned chef and author Johnson (Between Harlem and Heaven) has assembled an all-star cast to create his latest cookbook. Beautiful illustrations by coauthor Novgorodoff (Long Way Down) pair well with Beatriz da Costa's lush and elegant full-page food photography, styled by the talented Roscoe Betsill and Frances Luard. Cooks are greeted with the basics needed to have success cooking rice, whether on the stovetop, in a rice cooker, or in the oven, along with a primer on the history and types of rice. Recipes span the globe and include familiar and unusual dishes of varying complexity. Chapters include breakfast and dessert and drinks, which are full of surprises. Vignettes throughout feature cultural traditions, conversations with chefs from around the world, and a variety of details about rice production.
