Simons, one of the founders of Seed + Mill, an NYC purveyor of tahini and halva, delivers her first cookbook, exploring all things derived from sesame. She explores an array of cuisines and meals using the most common expressions of sesame in cooking--the oil, the seed, and the paste. The introduction covers the history and production of sesame along with more practical advice for tasting and storage. Recipes originate from Simons's years traveling and living globally. The focus on fresh ingredients is appreciated and will make this a favorite of vegetarians and chefs with gardens. The sweets are a major highlight, with myriad lovely breakfasts and desserts, including a bittersweet chocolate tahini tart. Each section of the cookbook is thoughtfully organized by course, making it easy to navigate and find inspiration for easy dinner or entertaining. While a purchasing guide would have been a useful addition, the book's emphasis on fresh ingredients and global flavors will provide ample opportunities for delicious meals.
